cups sugar
1-1/2 cups
salad oil
3 large eggs
3 cups
all-purpose
flour
1 teaspoon
baking soda
1 teaspoon
salt
1-1/2 teaspoon
vanilla
3 cups diced
and peeled
cooking apples
1 cup chopped
black walnuts
1 cup flaked
coconut
Mix
together sugar
and oil.
Add
eggs.
Set aside 1/2
cup flour, and
add the rest
of the flour
to sugar
mixture with
soda, salt,
and
vanilla.
Combine
apples, nuts
and
coconut.
Toss with the
remaining 1/2
cup of
flour.
Add fruit to
batter.
Turn
into a greased
and floured
10" tube
or Bundt
Pan.
Bake at 350
degrees for 1
hour and 20
minutes, or
until done
when
tested.
Remove from
pan and, while
cake is still
warm, drizzle
glaze over
cake.
Orange
Glaze:
1
can frozen
orange juice
concentrate
undiluted (6
oz.)
1 cup
confectioner's
sugar
1 teaspoon
grated orange
rind
1 tablespoon
flaked coconut
In
saucepan, warm
juice.
Add sugar and
stir to
dissolve.
Add orange
rind and
coconut.
Pour over warm
cake.
