cups grated
raw summer
squash
1/4 cup finely
chopped onion
Pepper to
taste
2 teaspoons
sugar
1/2 teaspoon
salt
6 tablespoons
self rising
flour
2 eggs, beaten
2 tablespoons
melted butter
Combine
first 6
ingredients.
Stir eggs into
squash
mixture.
Add
butter.
Drop fritters
by tablespoons
onto greased
griddle or
skillet.
Cook until
lightly
browned.
Turn and brown
on the other
side.
Serve
immediately.
